Vegetarian Taco Salad

I've been trying to eat more vegetables lately, which is easier said than done. I thought it might be fun to share my successes on here so that other may benefit when my experimentations go incredibly well!

Tonight I made a Vegetarian Taco Salad. I used:

- Taco flavoring
- Green Beans
- Corn
- Red Pepper
- Red Onion
- Black Beans
- Tomato
- Olive Oil
- Lettuce

( Optional:
- Cheese
- Salsa
- Sour Cream
- Guacamole
- Olives )

To make it, just diced all the veggies except for the lettuce and beans and stir-fried them in a pan with the olive oil. When they were almost cooked, I followed the instructions on the taco packet as if I were cooking meat (add water, simmer until saucy).

Then, cut up some lettuce and put the mixture over your greens, and voilĂ ! Yummy taco salad.

I also added some cheese, salsa and sour cream on top, and I think guacamole and black olives would have been delicious as well.

To Be Completely Cruel...

I saw an ad just now that said that 1 in 4 women misread a traditional pregnancy test. I just have to say, what is so hard about the difference between "+" and "-"? Or perhaps "|" vs. "||"? People are more daft than I realized.

Pesto!

I just made home made pesto, and it is good. I put in:

- Basil
- Parmesan Cheese
- Olive Oil
- Garlic
- Capers

The capers are not supposed to be in there, but I threw some in for good measure. I think it is actually quite an edible blend, and not bad for a first ever attempt without a recipe.

Tonight I am going to play Rock Band (my new obsession) which should be a lot of fun, too. I also went to the park this afternoon (and this morning, for that matter). It's been a great Sunday!

Star Wars Web Project

I know! It's been forever since I've posted! In my time away I've seen 5 concerts, been to a wedding, a casino, Boston, New Hampshire, museums, Ikea, and have moved. Today we finally got the internet in our new place, and I was reading one of my new favorite blogs when I came across this cool project at Vimeo. Basically what they are doing is remaking the whole of Star Wars - each person is responsible for a 15 second clip, and when everyone is done they are going to put the clips together to make a remake of the full film. I've always loved Vimeo, especially their community projects and collaborations, and I am really looking forward to seeing this when (if?) it is ever finished.
